Almost certainly named after a local mountian peak and something of a Mavrovo specialty, bakardan is a simple savoury porridge-like dish made from cornflour, butter and water that are heated together in a pan and slowly mixed with a long wooden stick. Not to everyone’s taste, the classic mountain dish can be found on menu local menus and is best served with plenty of cheese and yougurt.
