Known in the local vernacular as Berovsko sirenje and also sometimes referred to as strigle cheese, the best cheese in the region if not the country is this wonderful white and creamy affair made to very strict standards using only the very best milk from a local variety of sheep. Often made with the addition of small pieces of sweet green pepper and therefore not having the longest of shelf lives ensures that whatever Berovsko sirenje you eat it’s almost guaranteed to be fresh. Order a large side dish of the stuff if you’re ordering meze style and try it with everything. This genuinely wonderful cheese is becoming increasingly popular in France, a sign that it’s not just any old piece of mouse trap.
