With the opening of Pop's Pizza Place, it appears as if pizza - or more specifically Naples' famed Neapolitan style pizza - has officially become the new burger. The same culinary dream team behind Ljubljana's favourite gourmet burger and craft beer establishment has brought their know-how to the pizza trade, melding gourmet Neapolitan pizza with Brooklyn style in a gorgeous location at the corner of Breg and Novi Trg in the old town. What exactly is this Neapolitan pizza that's all the rage these days? Like most Italian cuisine, the secret lies in its simplicity and top quality ingredients. The dough is kneaded by hand and left to rise for up to 48 hours, is no more than 3mm thick and is only baked for 90 seconds, with the whole process being more akin to an art than science. The early results suggest that this experiment has been a culinary success.
