A lot of traditional foods are already vegetarian and in recent years Florence has come a long way in providing viable vegan options. Restaurants like to offer the full experience to their patrons, one which usually starts with toasted bread crostini appetizers (Tuscany’s answer to Bruschetta) and continues through with a few courses and glasses of wine before finishing with a desert.
