Calling Saba Spice the national drink might not be appropriate as many locals swear by Heineken. In fact, most Sabans adore this most Dutch of export products and even prefer it to local Caribbean beers Carib and Presidente. But all of these are imported, while the sweet rum-based liqueur Saba Spice is made entirely on the island. The ingredients include a concoction of 151-proof rum and herbs and spices whose exact recipe is a well-kept secret among the island’s families.
