The national dish of the Macedonians, tavče gravčeis a simple affair involving butter beans, onions, tomatoes and a few herbs and spices. Rich in regional variation, arguably the best to be found in the land is Tetovsko tavče gravče, a Tetovo favourite in which the basic ingredients are given a lift with the addition of meat and fresh green peppers, the former being anything from succulent local pork to sausages and even sometimes smoked ribs. Bubbling away in small skillets throughout the Polog region, eating tavče gravče is a veritable right of North Macedonian passage.
