Edomae


The ace in the hole at Edomae would have to be the omakase performances on Friday an Saturday evenings, when the Japanese chef decides what you eat (8 seats only per omakase, reservation required). The chef prepares more than a dozen small courses (mainly small bites of raw fish, mussels and other seafood) right in front of you at the bar, explains what he's created and then, most importantly, how to eat it. For newbies like us it was news that you actually turn these nigiri creations upside down when eating them, so the flavours of the fish and toppings like blossoms, sesame or Japanese pepper land directly on your tongue first and not the rice. One of these remarkable and recommended menus including miso soup, dessert and coffee costs 120Sfr. They also offer a menu every evening for walk-in guests that allows you to experience chef Sasaki's skills with favourites such as his sashimi mix, Japanese curry or chicken katsu.
